İskender'i Özel Kılan Nedir?

1. İnce Kesilmiş Döner Eti

İskender'in eti, dikey dönerden ince yapraklar hâlinde kesilir.

2. Domates Sosu

Domates sosu, İskender'in karakterini belirler.

  • İskender'i sıcak sıcak yiyin; bekledikçe pide fazla yumuşar.
  • Yoğurdu ayrı tutarak her lokmada sıcak-soğuk kontrastını yaşayın.

What Is İskender Kebab?

İskender kebab is one of Turkey's most famous and beloved kebabs. Originating in Bursa in the 19th century, it brings together thinly sliced döner meat, buttered tomato sauce, yoghurt and pide bread. It takes its name from İskender Efendi, who developed the dish. Today it is a symbol of Bursa and is served in Turkish restaurants across Turkey and abroad.

What sets İskender apart from an ordinary döner plate is the harmony of its layers: butter-toasted pide at the bottom, thin slices of meat on top, hot tomato sauce poured over, and cool yoghurt on the side. Every bite combines hot and cold, soft and lightly crisp textures.

What Makes İskender Special?

1. Thinly Sliced Döner Meat

The meat is cut in thin leaves from a vertical döner spit. Traditionally a mix of lamb and beef is used. Marinating and slow cooking over strong heat keep the meat both tender and flavourful. In a good İskender the meat is neither dry nor greasy, and it keeps its texture even when it meets the sauce.

2. Tomato Sauce

The tomato sauce defines the character of the dish. Prepared with fresh tomatoes, butter and light seasoning, it should be neither too sour nor too sweet. The sauce is poured over the meat at the moment of serving, so the pide softens without turning soggy.

3. Yoghurt

The yoghurt served alongside balances the dish. Strained yoghurt is usually preferred. Next to the hot sauce and meat, the cool yoghurt brings freshness and lightens the richness. Taking it bite by bite, without mixing it fully into the sauce, is the most enjoyable way.

4. Butter and Pide

The finishing touch is hot melted butter drizzled on top. The butter gives the sauce shine and depth. The pide underneath absorbs the sauce and forms the base of the dish. Good pide should be lightly crisp outside and soft inside.

How to Eat and Order İskender

İskender is usually served as a portion on a plate. It may come with grilled tomato and pepper, and sometimes rice. When ordering, you can ask about the portion size of meat. Those who like heat can ask for chilli flakes or hot sauce. Ayran is the classic drink pairing; some people prefer şalgam (turnip juice).

If you want to try it at home, you can use thinly sliced steak instead of ready döner meat and prepare the tomato sauce from fresh tomatoes. For a true Bursa-style experience, though, the presentation matters: a hot plate, generous sauce and yoghurt on the side.

How to Recognise a Good İskender

  • Meat: Thin, tender and fresh; it should not taste dried out or stale.
  • Sauce: Tasting of fresh tomato and well balanced; it should not be dominated by tomato paste.
  • Pide: Should soften when it meets the sauce but not fall apart.
  • Yoghurt: Cold and fresh, never sour.
  • Presentation: The plate should arrive hot; sauce and butter should be added just before serving.

Tips for İskender

  • Eat İskender while it is hot; the longer it waits, the softer the pide becomes.
  • Keep the yoghurt separate to enjoy the hot-cold contrast in every bite.
  • Adjust the amount of meat and sauce to your taste.
  • Ayran completes the flavour of the meal.
