Afiyet olsun!

English Version

Kıymalı pide is one of the most beloved baked dishes of Turkish cuisine: thin dough with crisp folded edges, topped with spiced minced-meat filling and butter melting the moment it leaves the oven. Making it at home can look daunting, but good dough, the right filling and a hot oven are really all you need. This guide covers the tricks for kıymalı pide in both a home oven and a stone oven.

What Is Kıymalı Pide?

Pide is Anatolia's flatbread, and kıymalı pide is its most classic variety. The dough is rolled into a long boat shape, its edges folded up, and minced-meat filling spread in the middle. A good pide has a crisp base, puffed edges and a juicy centre. The best-known pide centres are the Black Sea and Central Anatolia, but every region has its own version: some add tomato to the filling, others use only onion, pepper and spices. The common thread is this: pide is served hot and usually brushed with butter.

Dough Secrets

Good pide starts with good dough. Flour, water, yeast, salt and a little sugar are kneaded into a soft dough that does not stick to the hands. The dough must rise for at least an hour, ideally two; rushed dough will not puff in the oven and turns hard. The risen dough is divided into portions, each rolled into an oval. The middle of the dough should be slightly thinner than the edges, because the filling cooks in the middle while the edges puff up. Lightly oiling the dough instead of dusting it with flour while rolling gives a crisper pide.

How to Prepare the Minced-Meat Filling

For the classic filling, medium-fat beef mince is preferred; lamb mince can be mixed in, but on its own it can be heavy. Finely chopped onion, green pepper, tomato and parsley are added to the mince. Salt, black pepper and chilli flakes are enough for seasoning; a little cumin can be added. The filling is spread raw onto the dough — it is not pre-cooked — because the mince cooks in its own juices in the oven and the pide stays moist. Spreading the filling too thickly is a mistake: the middle of the dough gets soggy and the base does not cook. A thin, even layer is best.

Baking and Serving Tips

In a home oven, bake pide at the highest temperature on a preheated tray or pizza stone; this gives the closest result to a stone oven. Pide usually bakes in 12–15 minutes: it is ready when the edges are golden and the mince has absorbed its juices. When it comes out of the oven, brush it with a piece of butter and rest it for two minutes before slicing. Ayran, grilled pepper and pickles are classic accompaniments. When judging a pide restaurant, check the smell of the dough and the crispness of the base: a pide with a soft, doughy base signals an oven that was not hot enough. To try it at home, start with one small pide, then scale up for crowded tables. Enjoy your meal!
