What Is Künefe?
Künefe is a hot Turkish dessert made with melting unsalted cheese layered between fine shredded kadayıf pastry, sweetened with syrup. Its home is considered to be Antakya (Hatay), from where it spread across Turkey and Middle Eastern cuisine. Dessert lovers describe künefe as a "hot cheesy dessert": crisp outside, flowing inside.
The magic of künefe is the harmony of contrasts: kadayıf crisped in butter, unsalted cheese melting inside, and warm syrup poured over. Done right, the first spoonful brings crunch, then stretching cheese and balanced sweetness.
What Goes Into Künefe?
Kadayıf
Kadayıf is fine, thread-like pastry. It is mixed with butter and spread in two layers in a tray. Good kadayıf turns golden when browned and keeps its crispness.
Cheese
Künefe cheese must be unsalted and suitable for melting. In Antakya, unsalted white cheese is traditionally used. The cheese should give a stretching texture when hot, without making the dessert salty. Salty cheese upsets the balance with the syrup.
Syrup
The syrup is made by boiling water and sugar, usually with a few drops of lemon. It should be neither too thick nor too watery. Künefe is syruped while hot, straight from the oven, so the kadayıf absorbs the syrup without turning soggy.
Topping
Before serving, ground pistachios are sprinkled on top. The pistachio adds colour and light crunch. Some places also add clotted cream (kaymak).
Why Is Antakya Künefe Different?
Antakya is known as the birthplace of künefe, and there künefe is a matter of culture. In Antakya künefe, the kadayıf is fine, the cheese generous and the syrup balanced. In the city, künefe is usually baked fresh to order in stone ovens or special künefe trays. This freshness preserves the crispness and the flowing cheese.
The fame of Antakya künefe rests on ingredient quality and the experience of its makers. The unsalted cheese, the fineness of the kadayıf and the consistency of the syrup are protected by measures refined over years.
How to Eat Künefe
Künefe is served hot; as it cools, the cheese hardens and the crispness is lost. It is usually served in slices, topped with pistachios. Adding kaymak softens the sweetness. Turkish coffee or tea are the classic accompaniments; the bitterness of coffee balances the sweetness of the syrup.
Künefe can be eaten on its own after a heavy meal, but portions are usually filling, so sharing is common.
How to Recognise a Good Künefe
- Crispness: The outside should be golden and crisp, never soft or doughy.
- Cheese: It should stretch while hot and must not be salty.
- Syrup balance: Sweet but not overwhelming; the syrup should moisten the kadayıf, not drown it.
- Freshness: It should be baked fresh to order; künefe left sitting for hours loses its crispness.
- Pistachio: Real pistachios should be on top, with no artificial colouring.
Making Künefe at Home
Making künefe at home is possible: you need shredded kadayıf, unsalted cheese, butter and syrup. Mix the kadayıf thoroughly with butter, layer it in a tray with the cheese, and bake until golden. Pour the warm syrup over the hot dessert. The most important points are choosing unsalted cheese and serving the dessert hot.
